Yields: 3 servings
Ingredients:
2 cups cabbage, chopped
1 small carrot, diced
½ red pepper, diced
1 stalk celery, diced
3 radishes, sliced
½ cup raw zucchini or cucumber, diced
½ cup raw yellow summer squash, diced ¼ cup dry oats
Directions:
Combine all ingredients and serve with Lemon Dill Dressing
Lemon Dill Dressing
Yields: 8 servings
Ingredients:
2 teaspoons dried dill weed or 2 Tablespoons fresh
1 teaspoon onion powder
¼ teaspoon garlic powder
½ teaspoon salt (optional)
2 Tablespoons nutritional yeast
2 Tablespoons lemon juice
¼ cup water
⅛ - ¼ teaspoon xantham gum (optional thickener)
Directions:
Combine all ingredients in a small bowl and whisk together. Stir again before serving.
