Dawn's Non-Graham Crackers
Yields: 12 4-cracker Servings
Ingredients:
Non-stick pan spray
11⁄2 cups barley flour
1 teaspoon baking powder
1⁄2 teaspoon baking soda
1⁄4 teaspoon salt
1⁄4 teaspoon cinnamon or coriander
1⁄4 cup Earth Balance® or equivalent
1 Tablespoon grapeseed oil
3 Tablespoons honey
2 Tablespoons molasses
1⁄2 teaspoon vanilla extract
Water
Directions:
Prepare a baking sheet with non-stick spray and preheat oven to 375°F.
In a large mixing bowl combine dry ingredients.
Cut in margarine and oil until particles resemble small peas. Make a well in the center of the mixture.
Add honey, molasses, and vanilla into the well. Mix to form a stiff ball.
Add water, 1 teaspoon at a time, as needed to form a stiff ball.
Place dough between two pieces of wax paper and roll out to 1⁄8 inch thick. Take off the top layer of wax paper and place the dough side down on the prepared baking sheet. Remove the other piece of wax paper. Cut dough into squares with a sharp spatula or butter knife. Prick dough all over with a fork.
Place in a preheated oven and bake for 10-15 minutes or until golden brown. These burn easily and you may need to remove the outer edges and let the center continue to bake.
