"Fudgy" Fudge
Yields: 12 4-cracker Servings
Ingredients:
1⁄4 cup walnuts
3 Tablespoons vanilla almond milk
3⁄4 cup carob chips, juice sweetened
1 teaspoon vanilla
Non-stick pan spray
Directions:
Process crackers in a food processor until fine.
Combine crumbs and walnuts in a food processor and process until fine.
In a saucepan, heat milk over medium heat until warm.
Add carob chips to milk and stir until melted and thoroughly combined. Remove from heat.
Stir vanilla into the carob milk mixture.
Add cracker-walnut mixture to milk mixture and mix well.
Spray 8-inch square pan with non-stick pan spray. Press dough into pan and let sit for 30 minutes. Cut and serve. Freezes well.
Quick Tip: Use gluten-free “graham” crackers if you can find some that meet your needs.
Variation: If juice-sweetened carob chips are not available, use unsweetened carob chips and add 1/4 cup maple syrup. Add more cracker crumbs to get the desired consistency.
