Ginger Dill Carrots



Ginger Dill Carrots

Yields: 4 Servings


Ingredients:

  • 4 medium carrots, peeled with tops and tips removed 

  • ½ lemon, juiced 

  • ½ - inch cube fresh ginger pressed 

  • ½ teaspoon dill 

  • ½ teaspoon salt (optional) 


Directions:

  1. Peel carrots and remove tops.

  2. Place in a steamer basket and steam over medium-high heat until tender (approximately 10 minutes). 

  3. After steaming, place carrots on a serving plate.

  4. Drizzle with lemon juice and fresh ginger.

  5. Sprinkle with dill and salt.

  6. Serve. 


Variation:

May substitute orange juice for lemon juice
