Kimberly's Texas Caviar

Yield: 6 3/4-cup servings


Ingredients:

  • 2½ cups cooked (½-pound dry) black-eyes peas, with enough liquid to moisten

  • 1 red bell pepper, diced

  • ½ cup green onions, sliced or ¼ cup sweet onion, diced

  • 6 artichoke hearts, diced

  • ½ cup ripe green olives, pitted, sliced

  • ½ cup celery, diced

  • 1 Tablespoon parsley fl akes

  • 1 Tablespoon nutritional yeast

  • 1 Tablespoon fresh lemon juice

  • ¼ teaspoon salt, optional


Directions:

  1. Mix all ingredients. Chill until ready to serve.
