
Kimberly's Texas Caviar
Yield: 6 3/4-cup servings
Ingredients:
2½ cups cooked (½-pound dry) black-eyes peas, with enough liquid to moisten
1 red bell pepper, diced
½ cup green onions, sliced or ¼ cup sweet onion, diced
6 artichoke hearts, diced
½ cup ripe green olives, pitted, sliced
½ cup celery, diced
1 Tablespoon parsley fl akes
1 Tablespoon nutritional yeast
1 Tablespoon fresh lemon juice
¼ teaspoon salt, optional
Directions:
Mix all ingredients. Chill until ready to serve.
