Stewed Apples and Pears

Yields: 5 1/2-cup Servings


Ingredients:

  • 1 (15-oz) can pears in their own juice

  • 2 apples, peeled, cored, and sliced thin

  • 1 teaspoon cinnamon

  • 11⁄2 Tablespoons tapioca flour

Directions:

  1. In a small mixing bowl drain juice off pears into a container to use later. Slice pears.

  2. Prepare apples. In a medium skillet combine prepared apples, pears, cinnamon, and 2 Tablespoons of pear juice. Cover and simmer over medium heat for 5 minutes, stirring occasionally

  3. Dissolve flour in the remaining pear juice, and stir with a whisk until all lumps are gone. Pour over simmering fruit and stir until thickened and fruit is tender.


Hints: Freezes well. For sweeter fruit, add 1-5 Tablespoons maple syrup.
