Tasty Tuesday-Blueberry Banana Waffles


Blueberry Banana Waffles Yield: 4 large Belgian waffles Ingredients:

  • 1-2 ripe bananas

  • 3 cups old fashioned oats

  • ½ teaspoons salt

  • 2 Tablespoons maple syrup

  • 1 teaspoon vanilla extract

  • 2 ½-3 cups water

  • ½ cup cashew butter

  • 1 cup fresh blueberries

  • ½ cup maple syrup

Directions:

  1. Preheat waffle iron. Spray waffle iron with non-stick spray if needed.

  2. Combine first 5 ingredients in blender and blend till well mixed.

  3. Pour mixture in hot waffle iron and bake approximately 7-10 minutes (adjust time according to the performance of your waffle iron). No peeking!

  4. Remove waffle from waffle iron and place on plate.

  5. Top each waffle with one fourth of topping ingredients in the order given or top with Fresh Peach and Blueberry Topping (recipe below).

Quick Tips: Freezes well. Wrap individual waffles in freezer paper or place freezer paper between each waffle and cover the whole stack with freezer paper and tape or place together in plastic bag and put in the freezer. When ready to serve, thaw and place in toaster oven just long enough to make warm and slightly crispy. If not serving waffles immediately, place on parchment paper on a baking sheet and cover with foil. When ready to serve, place waffle in toaster oven to crisp up. Nutritional Facts per waffle:

Fresh Peach and Blueberry Topping

Yield: 4 1-cup servings


Ingredients:

  • 4 peaches, fresh or frozen

  • 1 cup fresh blueberries

Pineapple Glaze

  • 1 cup pineapple juice

  • 1 Tablespoon tapioca flour

  • ¼ cup maple syrup, optional

Directions:

  1. Peel and dice peaches.

  2. Add blueberries to peaches.

  3. Combine pineapple juice and tapioca flour into a small saucepan.

  4. Stir until tapioca flour is completely dissolved.

  5. Add maple syrup.

  6. Cook over medium heat, stirring constantly until thickened.

  7. Pour over peaches and blueberries and gently stir.

  8. Serve immediately.

  9. Enjoy and Bon Appetit!
