Turkey Stuffies
Yields: 8 Servings
Ingredients:
2½ cups broth
1 cup chopped celery
1 large onion
1 Tablespoon nutritional yeast
½ teaspoon basil
½ teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sage
½ Tablespoon dried parsley
2 Tablespoons extra virgin olive oil
1 package stuffing mix
16 plant-based turkey slices or Baked Tofu
Directions:
Combine first 10 ingredients in a large saucepan and bring to a boil.
Remove from heat.
Add stuffing mix to broth mixture and mix well.
Set aside.
Place a large spoonful of stuffing on each slice of turkey and fold it like a taco
Place in casserole dish, very close to each other to keep them in taco shape.
Spoon extra stuffing on top of the stuffed turkey slices.
Top with Onion Gravy (see recipe below).
Cover with foil.
Bake in a 350°F oven for 30 minutes.
Variation:
Instead of plant-based turkey slices use, Baked Tofu (see recipe below) slices in casserole dish and stand upright, then add stuffing, then another slice of baked tofu and continue to alternate until all the tofu is used.
Hint:
If preparing this ahead of time. Do not add the gravy until ready to bake.
Baked Tofu
Yields: 8 slices
Ingredients:
1-pound extra firm or super firm tofu
2-3 Tablespoons Bragg® Liquid Aminos
2 teaspoons honey baking dish.
2 teaspoons lemon juice
1 Tablespoon nutritional yeast
1 Tablespoon fresh ginger, minced
1 teaspoon minced garlic (1-2 cloves)
Directions:
Preheat oven to 400°F. Slice tofu block into 8 slices.
Mix together remaining ingredients.
Pour half the mixture into a 8” x 8”
Place tofu in a single layer on dish.
Pour remaining marinade over tofu.
Bake for 30 minutes.
Hint:
Substitute 1 teaspoon ginger powder, ½ teaspoon garlic powder for fresh ginger and fresh garlic.
Onion Gravy
Yields: 6 ½-cup servings
Ingredients:
2 cups onion, chopped
¼ cup broth
¼ cup whole wheat pastry flour
½ - 1 teaspoon salt
¼ cup nutritional yeast
2½ cups vegetable broth
Directions:
In a large skillet sauté onion in broth until onion is translucent.
Add flour and salt to onions and mix well.
Allow to brown slightly.
Add nutritional yeast and broth.
And whisk quickly until gravy is smooth.
Continue to whisk until gravy is thickened.
Variations:
This gravy can be blended to be smoother.
